Southern Honey Cornbread

Description

Light and fluffy southern cornbread with crisp golden edges and a soft, buttery center. This cornbread is perfectly moist and lightly sweetened with honey rather than sugar. This extra special southern honey cornbread is beautiful balance of savory and sweet!


Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all purpose flour 
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 3/4 cup whole milk buttermilk
  • 1/2 cup 2% milk
  • 1 large egg, at room temperature, lightly beaten 
  • 6 tablespoons unsalted butter, melted 
  • 2 tablespoons honey

 


Instructions

  1. Preheat oven to 425 degrees F and grease a 9 x 9 inch square baking dish with non-stick cooking spray. 
  2. In a large mixing bowl, whisk together the cornmeal, flour, baking powder, baking soda, cornstarch, and salt. 
  3. In a separate mixing bowl (medium sized), whisk together the buttermilk, 2% milk, egg, melted butter, and honey. 
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined. 
  5. Pour the cornbread batter into prepared baking dish and bake for 20-25 minutes until edges are golden brown and center is cooked through!
  6. Allow to cool on a wire cooling rack before slicing and serving. 

Notes

  • This cornbread falls somewhere in between savory and sweet. If you want to add some extra sweetness, you can increase the honey or add a tablespoon or more of brown sugar.
